Artichokes are among our favorite Mediterranean vegetable, fine and mild but with great flavor. The artichokes we use are harvested when they are small, which makes the production limited. Hours after harvest in Navarra, Spain, in the famous “Fertile Valley” our artichokes are peeled carefully by hand and quartered, then individually quick frozen (IQF) to preserve their delicate flavor.
